MIDWAY, FL - Today on What's to Eat we are making trail mix for those who need a snack while being active.

Ruth Nickens with Tallahassee Senior Center is helping us whip up the snack for the Senior Games.

CURRIED CASHEW TRAIL MIX (for champions)

4 cups roasted unsalted cashews

2 tbsp. olive oil

1 cup dried mango pieces

1 cup dried banana chips

1 cup large coconut flakes

2 cups sesame sticks

1 tbsp. curry powder

1 tsp. ground sea salt

1 tsp. turmeric

½ tsp. cumin

½ tsp. dried ground ginger

¼ tsp. garlic powder

¼ tsp. paprika

¼ tsp. ground red pepper

1) Mix all spices together in a small bowl. Adjust to taste.

2) Pour cashews into large bowl. Stir in olive oil and seasonings. Mix well. Spread on cookie sheet. Roast in 300 degree oven for 10 min until golden brown. Stir frequently to avoid burning nuts. Remove from oven to cool.

3) Blend dried fruit, sesame sticks and curried cashews in a large bowl. Store in large glass jar.

Calling all athletes 50 years of age and over! Registration for the popular Capital City Senior Games is open.

Competitions will take place March 4-13 and include archery, bag toss, basketball, bowling, cycling, golf, horseshoes, pickleball, power lifting, swimming, table tennis, tennis, track and field and, new this year, a one mile fun run/walk.

Come cheer on our senior athletes at the Torch Run, which helps mark the games.

The Torch Run takes place on Thursday, March 9, at 5:30 p.m. at Lake Ella.
