What's to Eat With 101 Restaurant

TALLAHASSEE, Fla. (WTXL) -- We met some of our new Kleman Plaza neighbors for this What's to Eat!

Chef Jason Bruner from the 101 Restaurant joined us on WTXL Sunrise.

He taught us how to make 101's quinoa lettuce wraps.

This recipe only takes a few steps, but it's still a very healthy and filling meal. 

You can swap in any vegetables that you like or that are in season. The 101 Restaurant uses many locally-sourced ingredients, including zucchini grown in Tallahassee. 

He says you can also add in chicken or shrimp. Click the thumbnail for more of Chef Bruner's advice. 

Here's Chef Bruner's instructions:

Ingredients

- 8 oz. cooked quinoa

- 3 oz. sautéed carrots

- 3 oz. sautéed onions

- 3 oz. sautéed squash

- 3 oz. sautéed zucchini

Cook down with ½ tablespoon of butter. Season to taste with salt and pepper. Serve inside of romaine hearts, drizzled with roasted pepper coulis.

To make the roasted pepper coulis, you'll need:

- 3 chard bell peppers

- ½ cup of local honey

- ¼ cup of red wine vinegar

- Teaspoon of mustard

- Teaspoon of sugar

Peel and seed bell peppers, place all ingredients in blender and blend until smooth. Add salt to taste.
