TALLAHASSEE, Fla. (WTXL) -- This What's to Eat is all about making healthy, low cost food in a short amount of time.
Elwanda Olander from the New Leaf Market joined us on WTXL Sunrise to show us how to make red, white & blueberry parfaits.
She says it's easy to make this snack at home with kids. You can swap in any fresh fruit you have on hand, and if you make the parfait overnight, just cover it and it'll last in the refrigerator for another day.

Here's her recipe:
Red, White and Blueberry Parfait
One pint each organic raspberries and blueberries
About 15 -20 cookies,( your choice of either meringue or macaroon)
1 pint heavy cream, whipped (sugar and vanilla is optional)
Place the raspberries in the bottom of the glass. Add a spoonful of whipped cream.
Add some crushed cookies and more whipped cream
Top with blueberries. Finish with whipped cream and a single blueberry.
Tip: You may use your favorite non- dairy whip instead of the heavy cream for a dairy free dessert.
