Farm to Table to You: Recipe for Cast-Iron Tangerine Upside Cake

WHAT YOU WILL NEED:

2 cups brown sugar

3 cups peeled tangerine segments

3 Cups cake flour

3 ¼ cup softened butter

1 2/3 cup sugar

2 eggs

1 ½ tsp. vanilla extract

1 ½ cup milk

1 tbsp. Baking powder

½ tsp salt

DIRECTIONS:

Preheat oven to 350 degrees. Place brown sugar evenly on the bottom of the cast iron pan. Place tangerine segments on top of the brown sugar until the pan is full, without stacking. In a large mixing bowl, stir together flour, baking powder and salt until incorporated together. In a mixer combine eggs, butter, sugar and vanilla. Beat on medium speed until fluffy. Now add some of the dry ingredients to you egg and sugar mixture while the machine is running. Once fully incorporated, add milk. Continue to add dry ingredients until completely incorporated and batter is smooth, scraping down the sides of the bowl as you go. Pour batter over the tangerines and brown sugar and bake for about 30 minutes or until toothpick comes out clean. Remove from the oven and let cool for 15-20 minutes before flipping it out of the cast iron serving with the tangerines on top. Add whipped cream and ice cream as desired.
